    Baked Potato Skins

    -4 med. russet potatoes
    -1/4 c. butter, melted
    -1/3 c. sour cream
    -1 1/2 c. shredded Cheddar cheese
    -1 tsp. snipped chives or green onion tops
    -5 slices bacon, cooked and crumbled


    Recipe

    -Preheat oven to 400.

    -Bake potatoes in microwave until they are soft, or in oven for 1 hr.

    -As potatoes are baking, make sour cream dip by mixing sour cream and chives or onions.
    -Mix together and place in refrigerator to chill.

    -When the potatoes are cool enough to handle, make 2 lengthwise cuts thru each potato, resulting in 3 slices that are 1/2" wide.
    -Discard the middle slices or save for mashed potatoes.
    -This will leave you with 2 potato skins from each potato (8 in all).

    -With a spoon scoop out most the potato from the skin, leaving about 1/4" of potato in the skin.
    -Brush the entire surface of the potato, inside and out, with the melted butter.

    -Place the skins on a cookie sheet, cut side up.
    -Turn the oven temperature up to broil.
    -Broil for 6-8 mins.

    -Place 2-3 T. of cheese on each skin.
    -Sprinkle with 2 tsp. of bacon.
    -Broil the skins for 2 more mins., or until the cheese is melted.

    -Serve hot on a plate, with sour cream dip in the middle of the plate.

    -Makes 2 servings
