    Baked Cheesy Vidalia Onion Dip

    Source of Recipe

    Recipe Circus: Mamafluffy

    List of Ingredients

1 8-oz package of cream cheese
    1/2 cup mayo
    1/2 cup Parmesan cheese
    1 cup grated cheddar
    1/2 cup grated Swiss
    1/4 tsp garlic powder
    1/4 tsp seasoning salt
    1/4 tsp pepper
    few dashes of Worcestershire sauce
    few dashes of hot sauce

1 large Vidalia or other sweet onion, cut into large dice
    2 T butter
    1 T olive oil
    pinch of salt and sugar

6-8 strips of bacon, cooked crisp and crumbled

    Recipe

Preheat oven to 400. Spray a small baking dish or pie plate with cooking spray, set aside.

In a large saucepan, saute the onions in the butter and olive oil with the pinch of salt and sugar. Cook over med-low heat until caramelized, stirring about every five minutes. This will take about 20-25 minutes.

While the onions are cooking, blend the cream cheese and mayo with an electric mixer until soft and creamy. Add the Parmesan, Swiss, and cheddar cheeses, along with the seasonings. Blend again until everything is incorporated. Set this aside until the onions are done.

Once the onions are soft and caramelized, remove them from the pan and drain on a paper towel. Let cool for a few minutes.

Stir the onions and the bacon into the reserved cheese mixture. Pour everything into the prepared dish, and bake at 400 for about 20 minutes, until bubbling and browned around the edges.

Serve with your favorite assorted crackers, French bread, or crispy breadsticks.

This reheats nicely in the microwave.
