    TOH Message Board 2005

    List of Ingredients

1 lb. raw ground *pork (not sausage)
1 pkg. shredded cabbage with the carrots bits in it (1 oz.) (1 to 16)
*remove 1 1/2 cups and chop smaller
2 cloves minced garlic (I use the jarred kind already minced)
8 gingersnap cookies, crushed to *crumbs
(*place in ziplock baggie and crush w/rolling pin, or in blender or food processor)
    1/4 cup soy sauce
    1 Tbl. sliced green onions
    1 dash cayenne
    6 large tortillas (burrito-size)
Hoisin sauce (comes in a little jar by the chinese stuff)
2 cups or more shredded lettuc

    Recipe

In large bowl, combine pork, 1 1/2 cups of cabbage, garlic, gingersnap crumbs, soy sauce, scallions and cayenne.
    Mix well with your hands.
Form into 6 small, thick patties.
Over medium coals grill patties for about 4 minutes on each side with lid closed or til no longer pink inside, will be nicely browned on both sides.
Watch though, so they don't burn!
While patties are grilling, mix 2 cups shredded lettuce with 1/2 cup cabbage *and a bit more sliced green onions if desired.
Warm tortillas on grill, remove, and thinly spread one side all over with a small spoonful of Hoisin sauce.
Just enough to very thinly coat.
Place a small handful of lettuce mixture in center of each tortilla.
Place a cooked patty on top, fold over sides and kind of roll up other sides, sealing well like a package.
Slice in half and serve with white or fried rice!
Sometimes I thread 2 to 3 halves on bamboo skewers when I am serving for company, looks great!!

These are to DIE for, and even better the next day!!

*Don't pre-assemble leftovers though, because of the cabbage and lettuce.

    (These can also be pan-fried.)
