-3/4 pound smoked sausage, cut into 1-inch rounds
-16 large shrimp, peeled and deveined
-1/2 red onion, peeled and cut into 1-inch chunks
-1 green bell pepper, seeded and cut into 1-inch squares
-1 red bell pepper, seeded and cut into 1-inch squares
-3 tablespoons olive oil
-1/2 teaspoon salt
-1/4 teaspoon ground black pepper
-8 (10-in.) skewers
-1 lemon, juiced
Recipe
-Preheat broiler.
-In a large bowl, toss sausage, shrimp, onion, bell peppers, oil, salt and pepper until evenly coated.
-Thread onto skewers (pre-soaked for 30 minutes if using bamboo).
-Place on a broiler pan and cook about 5 inches from heat for 6 minutes, or until shrimp is pink and vegetables are starting to brown.
-Drizzle with lemon juice and serve immediately.
