    Coffee Cakes: Rhubarb Coffee Cake

    List of Ingredients


    • 3 1/2 cups diced rhubarb*
    • 3/4 cup sugar
    • 3 Tbls. cornstarch
    • 3 Tbls. cold water
    • CAKE:
    • 1 1/2 cups flour
    • 3/4 cup sugar
    • 1 tsp. cinnamon
    • 1/2 tsp nutmeg
    • 1/2 tsp salt
    • 1/2 tsp. baking powder
    • 1/2 tsp baking soda
    • 3/4 cup margarine
    • 2 eggs
    • 3/4 cup buttermilk
    • 1/2 tsp. almond extract
    • TOPPING:
    • 1/2 cup sugar
    • 1/2 tsp cinnamon
    • 1 Tbls. margarine
    • 1/2 cup chopped walnuts ( optional)


    Instructions


    1. In a sauce pan combine the rhubarb and sugar; let stand for 15 minutes.

    2. Combine the cornstarch and water and stir into the fruit mixture.

    3. Bring to a boil; cook and stir over medium heat for 2 minutes. Cool

    4. Combine all dry ingredients for the cake.

    5. In a seperate bowl combine eggs, buttermilk and extract; add to flour mix and blend through.

    6. Spread 1/2 of the mixture into a greased 9" pan.

    7. Carefully spoon the fruit mix on top.

    8. Spoon remaining cake mixture on top of fruit.

    9. For topping combine the sugar and cinnamon; cut in butter until crumbly.

    10. Stir in walnuts if using, and sprinkle over the batter

    11. Bake @ 350 for 40-45 minutes.

    12. * you can substitute 1 1/2 cups of the rhubarb for strawberries if you want.
