    • Roast or steak
    • BROTH:
    • 1 cup brown sugar
    • 3/4 cup salt
    • 1 Gallon hot water


    Instructions


    1. Put meat into jars. Leave a 1" headspace

    2. Cook the broth mixture til just warm.

    3. Pour broth over meat, remembering to leave the 1" headspace.

    4. Remove air bubbles with a non metal spatula.

    5. Wipe jar rim clean

    6. Place prepared lid and band on jars and seal to fingertip tight. We like to tighten firm the back it off just a little.

    7. Process @ 10 lbs pressure Pints: 1 hour and 15 minutes. Quarts 1 hour and 30 minutes.

    8. The broth will make 14 quarts.
