    We grow a ton of tomatoes... thus we CAN a ton of toamtoes. Stewed are great for chili, casseroles,stews ets.


    List of Ingredients


    • 40 qts. blanched, peeled, cut up tomatoes
    • 10 cups chopped celery
    • 10 cups chopped onions
    • 5 cups chopped green pepper1
    • sugar,
    • celery salt
    • pepper


    Instructions


    1. In a kettle mix to together the celery, onion and green pepper; just cover with water.Add seasonings to desired taste... Not too strong as you want the tomato flavor to dominate. Simmer, covered while preparing tomatoes. Do not let this go dry.. but not too much liquid either.
    2. Prepare tomatoes by blanching in hot water, dropping into cold water, peel,core and cut up and place into a LARGE canning strainer.
    3. In quart jars pack tomatoes 1/2 way to top; remove air bubbles with a non metal spatula. Place 1/4 to 1/2 cup celery mixture on top; fill with tomatoes leaving a 1" headspace. Remove air bubbles again.
    4. Put 1 tsp salt on top
    5. Wipe jar rim clean and seal.
    6. Tighten lid fingertip tight only. We tighten it firm then back it off just a bit.
    7. Process @ 10 lbs pressure for 20 minutes
    8. Makes 30 quarts.
