    Since we live in Iowa there is nothing better than opening a jar of tomatoes in winter... tastes just about as good as they do fresh out of our summer garden.


    List of Ingredients


    • Tomatoes (roughly 3 lbs per qt jar)
    • salt


    Instructions


    1. Prepare tomatoes by blancing them in hot water til skins crack, immediatly dump into ice water. Slip off the peels, cut off tops and core.
    2. Cut tomatoes in half (Leave small ones whole) Dump into a strainer.
    3. Pack into prepared quart jars. Leave a 1" headspace.
    4. Remove air bubbles with a non metal spatula.
    5. Add 1 tsp salt to top of each jar
    6. Wipe rims clean.
    7. Place prepared lid and band on jars and tighten fingertip tight. We tighten firmly; then back it off just a little
    8. Process @ 10 lbs pressure for 20 minutes.
