    Beef: Pot Roast

    List of Ingredients


    • 1 2-3 lb. chuck roast
    • 1 Tbls. oil
    • 2 large onions chopped
    • 2 cups sliced carrots
    • 1 cup sliced celery
    • 2 cans ( 14.5 oz each) stewed tomatoes
    • 1 1/2 cups water
    • Salt; pepper and thyme to taste
    • 4 potatoes peeled and cut into pieces


    Instructions


    1. Brown roast on all sides in oil.

    2. Place roast in crockpot.

    3. Add onions,carrots and celery around sides of roast

    4. Add tomatoes and water together with sesonings and pour over roast..

    5. Cook on low for 8 hours.

    6. Par boil poatoes in water til almost done.

    7. Drain poatoes and place in crock pot for 1 hour with roast.
