German Apple Cake

List of Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 1 tsp vanilla extract
- 2 cups flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 2 cups peeled, chopped tart apples
- 3/4 cups chopped pecans
- FROSTING:
- 1 (8oz) pkg. cream cheese (softened)
- 2 tsp. soft margarine or butter
- 2 cups powdered sugar
Instructions
- In a large mixing bowl, beat the eggs, sugar, oil and vanilla.
- Combine the flour, cinnamon, baking soda and salt.
- Add to the egg mixture and mix well.
- Fold in the apples and nuts.
- Pour into a greased 9 x 13 pan
- Bake @ 350 for 55-60 minutes.
- Cool.
- In a small mixing bowl combine the cream cheese and butter until smooth.
- Add the powdered sugar and blend unyil smooth.
- Spread over the cake.
- Keep Refrigerated.
