    Pineapple Upside Down In The Middle Cake

    Message from Rcy66y: My neighbor just gave me the recipe and it is DELICIOUS!! Enjoy!

    List of Ingredients

    Cake:
    -1 Duncan Hines Pineapple Surpreme cake mix
    -1 golden ripe pineapple
    -half stick of butter
    -half cup brown sugar

    *Worlds Best Frosting
    -1 c cream cheese
    -1 c powdered sugar
    -1 large box of Vanilla Jello Instant pudding mix (you can use other flavors for different cakes )
    -1 1/2 cups milk
    -1 small tub of cool whip
    -1 tsp vanilla

    Recipe

    Cake:
    -Take 2, 8 or 9 inch round cake pans and grease with butter.
    -Spread the brown sugar in the bottom of pans evenly .
    -Slice pineapple in 1/4 inch slices and place on top of the brown sugar.
    -Prepare cake batter as directed on the box and pour on top of the pineapple.
    -Bake at 350 til golden brown and toothpick comes out clean ..... cool
    -When cool flip cakes onto plates with pineapple side facing up the put the pineapple sides together so that you have a 2 layer cake with the pineapple in the middle cool for 20 minutes

    Frosting:
    -Mix together cream cheese and powdered sugar with electric mixer til smooth.
    -Add pudding mix ,vanilla and milk mix till well blended ....then add cool whip and mix very well.
    -Let set in fridge til firm .

    -When cake is cool and frosting is set frost cake generously then let sit in fridge for 20 minutes before serving.

    *This cake needs to be kept in the fridge or it will spoil quickly.

    *Not recomended for parties where it needs to sit out for long periods of time.
