    Cookie:
    1/2 c. margarine or butter
    1/2 c. light brown sugar
    1/2 c. granulated sugar
    1/2 tsp. vanilla
    1 egg
    2 c. sifted flour
    1/4 tsp. baking soda
    1 c. chopped nuts


    Filling:
    7 1/2 ounce package (1 1/2 c.) pitted dates already chopped.
    1/4 cup granulated sugar
    Dash of salt
    1/3 c. water

    Recipe



    Cookies:
    Cream margarine, add brown sugar and granulated sugar. Blend well.
    Add egg and vanilla, beat until light.
    Add sifted dry ingredients.

    Filling:
    Cut dates into small pieces.
    Combine with sugar, dash of salt and water.
    Bring to a boil.
    Simmer about 5 minutes.
    I find this works best in the microwave.

    Making the cookies:
    Divide dough in half.
    Roll on waxed paper into approx. 9 X12-inch rectangle. Spread both with filling and roll up tightly so you have
    a long roll.
    Wrap in paper.
    Chill over night.
    Slice 1/2-inch thick.
    Bake at 375 degrees for 10 minutes on lightly greased cookie pan.
