1 box vanilla cake mix
1/2 cup oil
1/2 cup water
2 eggs
1 3/4 cup flour
2 tsp vanilla
Recipe
Blend the cake mix, oil, water, eggs and vanilla with a mixer for 1 minute.
Add the flour and mix by hand with a wooden spoon.
Mix well.
Refrigerate dough for 30 minutes.
Roll into 2-inch balls.
Place on cookie sheet and bake at 350 for 10-13 minutes. You can top these with a light glaze of confectioners sugar, vanilla and milk.
Sprinkle with Holiday Colors
**Variations:
Use different flavors in cookies, such as lemon or almond extracts.
You may also add chocolate chips or nuts to batter as well.
**For filled cookies:
After rolling each cookie, press thumb to make a little dent in center.
Place 1/2 tsp strawberry jam in indentation.
Roll dough side over, pinch ends together and seal to shape the cookie into a little half moon. (you can seal with a fork like for pie crust edges)
