Supreme Lemon Pie

List of Ingredients
- 1 9" deep dish pie shell
- LEMON FILLING:
- 1 1/2 cups sugar
- 6 Tbls. cornstarch
- 1/2 tsp salt
- 1 1/4 cups water
- 2 Tbls. margarine
- 2/3 cup lemon juice
- 4-5 drops yellow food coloring
- CREAM CHEESE FILLING:
- 1 (8oz) pkg. cream cheese
- 1 (4oz) pkg. cream cheese
- 3/4 cup powdered sugar
- 1 1/2 cups cool whip
- 1 Tbls. lemon juice
Instructions
- Line the pie shell with foil and bake @ 450 for 8 minutes. Remove foil and bake 5 more minutes.
- Cool crust.
- In a sauce pan combine the sugar, cornstarch and salt. Stir in the water, bring to a boil over medium high heat.
- Reduce heat; cook and stir for 2 minutes.
- Remove from heat; stir in butter and food coloring.
- Gently stir in the lemon juice.
- Cool to room temperature ( at least one hour )
- In another mixing bowl beat the cream cheese and sugar until smooth. Fold in the cool whip and lemon juice.
- Spread cream mixture into prepared pie crust.
- Top with the lemon filling.
- Refrigerate over night.
- Store in frig.

Takes a little extra work, but worth it especially for those lemon lovers
