Good Eats' Rib Eye Steak

List of Ingredients
- 1 boneless rib eye steak
- oil to coat
- kosher salt and ground black pepper
Instructions
- Place a 10"-12" cast iron skillet in the oven and heat oven to 500.
- Bring the steak to room temperature.
- When oven reaches temp. remove pan and place on stove over high heat.
- Coat the steak with oil and season both sides with salt and and ground on pepper.
- Place immediately in the center of the dry pan.
- Cook 30 seconds without moving.
- Using tongs, turn and cook another 30 seconds.
- Put pan back into oven and cook for 2 minutes
- Flip steak over and cook 2 more minutes
- This is the timing for medium rare steaks.
- Add a minute on both sides for medium etc.
- Remove steak from pan and cover loosely with foil.
- Let rest for 2 minutes.
- Serve whole or slice thin and fan onto plate
