Cube Steak Parmigiana

- 4 cube steaks
- 3 Tbls. flour
- salt and pepper to taste
- 1 egg
- 1Tbls. water
- 1/3 cup grated parmesan
- 1/3 cup cracker crumbs
- 1/2 tsp. basil
- oil to brown steaks in
- 1 jar spaghetti sauce
- 2 slices mozzarella cheese
- 1/3 cup grated parmesan cheese
- Hot cooked spaghetti for 4
Instructions
- In three seperate small bowls mix the following:
- Bowl 1: flour, salt and pepper
- Bowl 2: egg and water
- Bowl 3: parmesan cheese, crackermeal crumbs and basil
- Dip the steaks into the flour 1st; then the egg mixture, then roll in cheese mixture.
- In a large skillet heat oil and brown steaks on both sides.
- Remove to a greased 9x13 in a single layer.
- Bake, uncovered @ 350 for 25 minutes, turning once.
- Pour spaghetti sauce over the top and bake 20 minutes longer.
- Place 1/2 slice mozzarella cheese on each steak. Sprinkle with parmesan cheese and a little oregeno.
- Return to oven for 5 more minutes to melt the cheese.
- Serve with hot cooked spaghetti.
