    Ulimate Chicken Quesadillas

    List of Ingredients


    • 1 (10oz) can RO*TEL diced tomatoes and greed chilies undrained
    • 1 lb. processed cheese; cubed
    • 4 cups shredded cooked chicken
    • 1/2 cup sliced green onions
    • 6 (10in) flour tortillas
    • Garnish:
    • Sour Cream
    • Quacamole
    • Chopped black olives


    Instructions


    1. Drain tomatoes; save liquid.

    2. In a medium microwave-safe bowl, combine the cheese and tomatoes. Cover and microwave on medium heat for 5-6 minutes; until cheese is melted. Stirring once during cooking time.

    3. Drizzle reserved liquid over the chicken and toss until absorbed.

    4. Add the chicken and cheese mixtures together; blending well.

    5. Coat a large non stick skillet with cooking spray.

    6. Heat over medium high heat.

    7. Place 1 tortilla in skillet and spread about 3/4 cup mixture over 1/2 of the tortilla.

    8. Fold over and heat til golden brown about 1 minute.

    9. Repeat to prepare remaining tortillas.

    10. Cut into wedges and serve with the garnish of your choice.
