Ulimate Chicken Quesadillas

List of Ingredients
- 1 (10oz) can RO*TEL diced tomatoes and greed chilies undrained
- 1 lb. processed cheese; cubed
- 4 cups shredded cooked chicken
- 1/2 cup sliced green onions
- 6 (10in) flour tortillas
- Garnish:
- Sour Cream
- Quacamole
- Chopped black olives
Instructions
- Drain tomatoes; save liquid.
- In a medium microwave-safe bowl, combine the cheese and tomatoes. Cover and microwave on medium heat for 5-6 minutes; until cheese is melted. Stirring once during cooking time.
- Drizzle reserved liquid over the chicken and toss until absorbed.
- Add the chicken and cheese mixtures together; blending well.
- Coat a large non stick skillet with cooking spray.
- Heat over medium high heat.
- Place 1 tortilla in skillet and spread about 3/4 cup mixture over 1/2 of the tortilla.
- Fold over and heat til golden brown about 1 minute.
- Repeat to prepare remaining tortillas.
- Cut into wedges and serve with the garnish of your choice.
