Cheesy Zucchini Manicotti

- 1 (8oz) pkg manicotti shells
- 2 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 3 Tbls. minced parsley
- salt and pepper to taste
- 1/8 tsp. nutmeg
- 1 egg, beaten
- 3/4 cup sour cream
- 1/3 cup Italian Salad Dressing
- 1/2 cup shredded zucchini
- 1 (14oz) jar spaghetti sauce of your choice
Instructions
- Cook manicotti; rinse in cold water and drain.
- In a large bowl, combine 2 cups mozzarella, parmesan, parsley, salt and pepper and nutmeg..
- Stir in the egg, sour cream, salad dressing and zucchini.
- Carefully stuff the shells;
- Place in a greased 9x13 pan.
- Pour the spaghetti sauce on top.
- Bake, uncovered @ 350 for 35 minutes.
- Sprinkle on remaining cheese and bake an additional 5 minutes.
