    Cheesy Zucchini Manicotti

    List of Ingredients


    • 1 (8oz) pkg manicotti shells
    • 2 1/2 cups shredded mozzarella cheese
    • 1/2 cup shredded parmesan cheese
    • 3 Tbls. minced parsley
    • salt and pepper to taste
    • 1/8 tsp. nutmeg
    • 1 egg, beaten
    • 3/4 cup sour cream
    • 1/3 cup Italian Salad Dressing
    • 1/2 cup shredded zucchini
    • 1 (14oz) jar spaghetti sauce of your choice


    Instructions


    1. Cook manicotti; rinse in cold water and drain.

    2. In a large bowl, combine 2 cups mozzarella, parmesan, parsley, salt and pepper and nutmeg..

    3. Stir in the egg, sour cream, salad dressing and zucchini.

    4. Carefully stuff the shells;

    5. Place in a greased 9x13 pan.

    6. Pour the spaghetti sauce on top.

    7. Bake, uncovered @ 350 for 35 minutes.

    8. Sprinkle on remaining cheese and bake an additional 5 minutes.
