Cheese Potato Casserole

List of Ingredients
-2 pounds potatoes, scrubbed
-1/4 cup butter or margarine
-1 onion, chopped
-1 teaspoon salt
-1/4 teaspoon pepper
-1 8-ounce container sour cream
-1 10-3/4 ounce can cream of chicken soup
-8 ounces shredded Cheddar cheese
-3 tablespoons butter or margarine, melted
-1-1/2 cups herb-seasoned stuffing mix
Recipe
-Cook potatoes in boiling water for 30 minutes or until tender.
-Drain.
-Let cool to the touch.
-Peel and cut into 1/4-inch strips.
-Preheat oven to 350°F.
-Spray a 13x9-inch baking pan with non-stick vegetable spray.
-In a large bowl, combine butter, onion, salt, pepper, sour cream, and soup; mix well.
-Gently stir in potatoes and cheese.
-Spoon into prepared baking pan.
-In a medium bowl, combine melted butter and stuffing mix; sprinkle over potato mixture.
-Bake for 25 minutes or until thoroughly heated.
