    Mustard Roasted Potatoes

    List of Ingredients




    3 med-large baking potatoes, slightly less than 2 pounds
    3 Tbs mustard( Used stone ground)
    2 Tbs olive oil
    2 Tbs freshly grated parm cheese optional, ( used it)
    Freshly ground pepper

    Recipe



    Oven set at 425
    Wash and scrub the potatoes.
    Dry well.
    Cut in half lenghtwise,then cut again and then cut into quarters.
    Combine and whisk together the mustard, oil and cheese. Add the potatoes and toss to coat.
    Spread into a lightly greased sheet pan and sprinkle with the pepper.
    Bake for 35-40 minutes~
    Serves 4
