Supreme Potato Casserole

- 8 medium potatoes peeled and cut into cubes
- 1 can cream of mushroom soup
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded velveeta cheese
- 1 cup sour cream
- chopped green onions
- salt and pepper to taste
Instructions
- Cook potatoes in water until ALMOST done. Do not over cook or they will become mushy. Drain and cool.
- In a large mixing bowl combine the soup, 1 cup of each cheese, sour cream, onions and salt and pepper.
- Stir in the potatoes.
- Place in a greased 9x13 pan.
- Sprinkl with remaining cheese.
- This is also good if you add all the cheese in the casserole and top with crushed corn flake crumbs instead.
- Bake @ 359 25-30 minutes.
