Vegetable: Asparagus and Tomato Salad

List of Ingredients
- 1 lb fresh asparagus
- 4 medium tomatoes; cut into wedges
- 3 cups sliced fresh mushrooms
- 1 small green pepper sliced thin (optional)*
- 1/4 cup oil
- 2 Tbls. cider vinegar
- 1 tsp garlic salt
- 1 tsp dried tarragon
- salt and pepper taste
- dash of hot sauce
Instructions
- Cut asparagus into 1" pieces amd cook in small amount of water till crisp tender; about 3-4 minutes. Drain and rinse in cold water.
- Place asparagus in a large bowl; add tomatoes, mushrooms,and green pepper.*
- In a small bowl mix well the remaining ingredients.
- Pour over the vegtables. Toss to coat
- Cover and refigerate for at least 2 hours. Over night is best.
Final Comments
This is the exact way I found the recipe; but being an onion lover I add thinly sliced red onions and omit the green pepper.
