    Vegetable: Asparagus and Tomato Salad

    List of Ingredients


    • 1 lb fresh asparagus
    • 4 medium tomatoes; cut into wedges
    • 3 cups sliced fresh mushrooms
    • 1 small green pepper sliced thin (optional)*
    • 1/4 cup oil
    • 2 Tbls. cider vinegar
    • 1 tsp garlic salt
    • 1 tsp dried tarragon
    • salt and pepper taste
    • dash of hot sauce


    Instructions


    1. Cut asparagus into 1" pieces amd cook in small amount of water till crisp tender; about 3-4 minutes. Drain and rinse in cold water.

    2. Place asparagus in a large bowl; add tomatoes, mushrooms,and green pepper.*

    3. In a small bowl mix well the remaining ingredients.

    4. Pour over the vegtables. Toss to coat

    5. Cover and refigerate for at least 2 hours. Over night is best.



    Final Comments


    This is the exact way I found the recipe; but being an onion lover I add thinly sliced red onions and omit the green pepper.
