    Potato: Cajun Potato Salad

    List of Ingredients


    • 2 lbs. small red potatoes
    • 1/2 cup chopped red onions
    • 1/2 cup sliced green onions
    • 1/4 cup minced parsley
    • 6 Tbls. cider vinegar
    • 1/2 lb. precooked smoked kielbasa or cajun sausage sliced
    • 6 Tbls. oil
    • 1 Tbls. dijon mustard
    • 1/4 tsp. minced garlic
    • 1/4 - 1/2 tsp. cayenne pepper


    Instructions


    1. Cook the potatoes in boiling salted water for 20-25 minutes until tender; drain.

    2. Cool completely.

    3. Cut into 1/4" slices and place into a bowl.

    4. Add onions, parsley and 3 Tbls. vinegar; toss.

    5. In a skillet, cook sausage in oil for 5-10 minutes, until it begins to brown.

    6. Remove with a slotted spoon and add to the potato mix.

    7. To the drippings add mustard, garlic, pepper and remaining vinegar.

    8. Bring to a boil, whisking constantly.

    9. Pour over the salad and toss.

    10. Serve immediately.
