    Vegetable: Marinated Garden Salad

    List of Ingredients


    • 1 1/2 lbs. fresh green beans
    • 1 Pint cherry tomatoes cut in half
    • 1-2 cups thinly sliced red onions ( can be chopped also)
    • 1 cup sliced fresh mushrooms
    • DRESSING:
    • 1 1/2 cups vegetable oil
    • 2/3 cup cider vinegar
    • 2 Tbls. sugar
    • 4 tsp. dijon mustard
    • salt and pepper to taste


    Instructions


    1. In a glass jar with a lid mix the dressing ingreients together and shake well. Set aside

    2. Cook beans covered with water until just crisp tender. Drain and set aside.

    3. In one bowl combine tomatoes,onions and 1/2 cup of the dressing.

    4. In another bowl combine the mushrooms and q/4 cup of the dressing.

    5. In a third bowl combine the drained beand and the remaining dressing.

    6. Chill the veggies in their separate bowls for at least 4 hours.

    7. To serve, arrange vegetables on a platter.

    8. Serves 8-10
