Vegetable: Marinated Garden Salad

List of Ingredients
- 1 1/2 lbs. fresh green beans
- 1 Pint cherry tomatoes cut in half
- 1-2 cups thinly sliced red onions ( can be chopped also)
- 1 cup sliced fresh mushrooms
- DRESSING:
- 1 1/2 cups vegetable oil
- 2/3 cup cider vinegar
- 2 Tbls. sugar
- 4 tsp. dijon mustard
- salt and pepper to taste
Instructions
- In a glass jar with a lid mix the dressing ingreients together and shake well. Set aside
- Cook beans covered with water until just crisp tender. Drain and set aside.
- In one bowl combine tomatoes,onions and 1/2 cup of the dressing.
- In another bowl combine the mushrooms and q/4 cup of the dressing.
- In a third bowl combine the drained beand and the remaining dressing.
- Chill the veggies in their separate bowls for at least 4 hours.
- To serve, arrange vegetables on a platter.
- Serves 8-10
