French Onion Tomato Soup

List of Ingredients
- 4 cups thinly sliced onions
- 1/4 tsp. minced garlic
- 2 Tbls. margarine
- 1 (46oz) can tomato juice
- 2 tsp. beef bouillon granules
- 3 Tbls. lemon juice
- 2 tsp. parsley flakes
- 2 tsp. brown sugar
- 6 slices french bread toasted
- shredded mozzarella cheese
Instructions
- In a large sauce pan. saute the onions and garlic in butter until tender.
- Add the tomato juice, bouillon, lemon juice, parsley and brown sugar.
- Bring to a boil and simmer for 10-15 minutes. Stir occasionally.
- Ladle soup into oven proof bowls and top with french bread. Sprinkle cheese on top.
- Broil for 2-3 minutes until cheese is gooey and bubbly.
