Sizzling Rice Soup

List of Ingredients
- 1 cup uncooked long grain rice
- 8 cups of chicken broth
- 2 cups cubed, cooked chicken
- 2 cups sliced fresh mushrooms
- 1/2 cup sliced green onions
- 1 (8oz) can bamboo shoots
- 4 chicken bouillon cubes
- 1/2 tsp. garlic powder
- 1 (10oz) pkg frozen peas
- 1/4 cup oil
Instructions
- Cook rice according to pkg. directions. Spread rice on a greased 9x13pan.
- Bake @ 325 for 2 hours; stirring occasionally. Set aside.
- In a large kettle combine the broth, chicken, mushrooms, onions, bamboo shoots, bouillon, and garlic powder.
- Cover and simmer for 1 hour.
- Add peas and cook for 15 more minutes.
- Just before serving, heat oil in a fry pan and fry the rice until it puffs slightly.
- Ladle soup into individual bowls.
- Immediately spoon some of the hot rice into each bowl... IT WILL SIZZLE.
- Serves 10
