    Sizzling Rice Soup

    List of Ingredients


    • 1 cup uncooked long grain rice
    • 8 cups of chicken broth
    • 2 cups cubed, cooked chicken
    • 2 cups sliced fresh mushrooms
    • 1/2 cup sliced green onions
    • 1 (8oz) can bamboo shoots
    • 4 chicken bouillon cubes
    • 1/2 tsp. garlic powder
    • 1 (10oz) pkg frozen peas
    • 1/4 cup oil


    Instructions


    1. Cook rice according to pkg. directions. Spread rice on a greased 9x13pan.
    2. Bake @ 325 for 2 hours; stirring occasionally. Set aside.
    3. In a large kettle combine the broth, chicken, mushrooms, onions, bamboo shoots, bouillon, and garlic powder.
    4. Cover and simmer for 1 hour.
    5. Add peas and cook for 15 more minutes.
    6. Just before serving, heat oil in a fry pan and fry the rice until it puffs slightly.
    7. Ladle soup into individual bowls.
    8. Immediately spoon some of the hot rice into each bowl... IT WILL SIZZLE.
    9. Serves 10
