Carrots: Carrot Casserole

List of Ingredients
- 8 cups carrots sliced
- 2 medium onions, sliced
- 5 Tbls. margarine
- 1 can cream of celery soup
- salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup seasoned croutons
Instructions
- Place carrots in sauce pan and cover with water; bring to a boil. Cook until crisp-tender.
- Meantime in a skillet, saute onions in 3 Tbls. margarine until tender.
- Stir in soup, salt, pepper and cheese.
- Drain carrots; and add to onion mixture.
- Pour into a greased 2 qt. casserole.
- Sprinkle croutons on top.
- Melt remaining margarine and drizzle over croutons.
- Bake uncovered @ 350 for 20-25 minutes.
