    Carrots: Cheesy Carrot Casserole

    List of Ingredients




    -1 lb. of carrots, peel, and slice thinly
    -Boil until barely tender, then drain.
    -In same pan, melt 1 cube of butter and 8-10 slices of American cheese, or about 2" of Velveeta.
    -Stir until melted, and mix in carrots.
    -Transfer to a baking dish, and top with crumbled crackers, and a few slices of butter.
    -Bake about 30 mins., at 350.


    Note:
    -You can make the same thing using brocolli, but use the Velveeta and Ritz crackers, instead of the saltines.
