    Corn: Mimi's Jiffy CORN Casserole

    List of Ingredients


    • 2 eggs
    • 1 can creamed corn
    • 1 can whole corn
    • 1 cup sour cream
    • 1/2 cup melted margarine
    • 1 small pkg. corn muffin mix
    • 1 cup swiss cheese (shredded)
    • salt and pepper to taste


    Instructions


    1. Beat eggs and stir in corns, sour cream and butter

    2. Fold in muffin mix and season with salt and pepper.

    3. Place in a greased baking dish

    4. Sprinkle cheese on top

    5. Bake @ 350 for 35 minutes



    Final Comments


    This is a good casserole for corn. Different than the usual corn casserole
