    Zucchini: Zucchini Pie

    List of Ingredients




    -1 (8 oz.) crescent rolls
    -4 c. zucchini, sliced thinly
    -1 c. onion, chopped
    -2 eggs
    -1 1/2 c. Mozzarella cheese, shredded
    -1/4 c. margarine
    -2 tbsp. dry parsley
    -1/4 tsp. oregano
    -1/4 tsp. basil
    -1/4 tsp. garlic
    -Dash of salt and pepper

    Recipe



    -Saute zucchini and onions in margarine.
    -Add seasonings.
    -Press crescent rolls into a round pizza pan or a rectangle pan.
    -Press up the side of the pan to form a one inch lip.
    -Shred Mozzarella cheese and add eggs and mix well.
    -Drain any liquid off the zucchini and onions mixture and add to the cheese and eggs.
    -Mix well and pour into pan lined with the crescent rolls.
    -Bake at 375 degrees for approximately 30 minutes.
    **NOTE:
    -I bake it the first 20 minutes on center rack and last 10 minutes on the bottom rack.
    -This makes for a nice crispy crust.
