    A delicately mint-flavored frozen dessert

    List of Ingredients




    -*Four 1-ounce squares unsweetened chocolate
    -1 cup soft butter
    -2 cups confectionery sugar
    -4 eggs
    -1 teaspoon vanilla
    -1 teaspoon peppermint extract
    -Chopped nuts

    Recipe



    -Melt chocolate, cool, and set aside.
    -Using an electric beater, beat butter while gradually adding sugar (about 15 minutes); add cooled, melted chocolate.
    -Beat 5 minutes more.
    -Beat in eggs, one at a time.
    -Mix in vanilla and peppermint extract.

    -Sprinkle chopped nuts on bottom of 24 paper cupcake holders in cupcake pan.
    -Fill each cupcake holder half full.
    -Sprinkle more nuts on top,

    -Freeze for at least 3 hours.

    *Can substitute one 6-ounce package of chocolate chips.
