List of Ingredients

3-1/2 c. zucchini, coarsely grated
2 eggs, beaten
2 c. shredded mozzarella cheese, divided
1/2 c. grated Parmesan cheese
1/3 c. all-purpose flour
1 T. olive oil
1 c. spaghetti sauce
1 t. dried oregano
1/8 t. red pepper flakes




Recipe

Press zucchini between paper towels to remove excess moisture.
Combine zucchini, eggs, one cup mozzarella cheese, Parmesan cheese and flour in a medium bowl.
Stir well.
Spread in a greased 13"x9" baking pan.
Bake at 350 degrees for 20 to 25 minutes.
Remove from oven, brush surface with oil.
Broil 5-1/2 inches from heat for 5 minutes.
Remove from oven; spread spaghetti sauce on top.
Sprinkle with remaining mozzarella cheese, oregano and red pepper; bake at 350 degrees an additional 20 minutes.

Serves 6
