    Pies: Double Crust Fresh Lemon Pie

    List of Ingredients

    -1 1/4 cup sugar
    -2 T. flour
    -1/8 tsp. salt
    -1/4 cup soft butter
    -3 large eggs, beaten
    -2 large lemons
    -1/4 cup water
    -1/4 cup lemon juice

    -1 pkg. refrigerated pie crust, Pillsbury recommended



    Recipe

    -Combine sugar, flour, salt.
    -Mix well.
    -Blend in butter until smooth.
    -Peel lemons and cut into very thin slices.
    -Add water and lemon juice to mixture and blend together until smooth.
    -Pour into pie crust (prepared per instructions).
    -Add top crust.
    -Brush with butter.
    -Sprinkle with sugar.
    -Bake at 350 degrees for 30 to 35 minutes or until golden brown.
