Spam: Down Spam-ico Way

List of Ingredients
-1 T. olive oil
-1 small onion, diced
-1 T. garlic, minced
-1 (12 oz.) can SPAM, chopped
-3/4 cup roasted tomatoes, coarsely chopped
-1 1/2 cups grated Monterey Jack cheese
-4 poblano peppers
-1/2 small can chipotle peppers
-1 cup heavy cream
-1 T. lime juice
Recipe
-Preheat oven to 350 degrees.
-Over medium heat in a large pan, sauté onions and garlic in the olive oil until the onions are translucent.
-Add the SPAM and cook for approximately 5 more minutes, stirring frequently.
-Combine the cheese, roasted tomatoes and the SPAM mixture.
-Stuff the peppers with the SPAM and cheese filling.
-Place the stuffed peppers in a shallow, non-reactive baking dish and bake for approximately 25 minutes.
-While peppers are baking, prepare the sauce.
-In a blender or food processor, puree the chipotle peppers.
-In a small sauce pan, combine the heavy cream and chipotle peppers.
-Over medium heat, reduce to approximately 1 cup.
-Stir in the lime juice.
-When the stuffed peppers are ready, divide the sauce among 4 plates.
-Top with a SPAM stuffed poblano pepper.
