Almost from Scratch Pumpkin Pie

List of Ingredients
1 cup sugar (can use 1/2 brown 1/2 white)
1/2 tsp salt
1 1/2 tsp saigon cinnamon
1 tsp pumpkin pie spice or more to taste
2 large eggs
1 can (15 oz) libbys pure pumpkin
1 12oz can evaporated milk
1/2-1 tsp vanilla to taste
pillsbury fresh pie dough
1 pkg frozen pie tart shells
Recipe
Mix sugar, cinnamon, salt, and spices in small bowl.
Beat eggs in large bowl, stir in pumpkin and sugared spice mixtures.
Gently add in milk and vanilla.
Pour into big shell and into as many pie tarts as you can. I usually use a smaller pie pan so i can get one larger pie and 8 little tarts-i just love the tarts better.
Before baking take extra dough and cut shapes from the little cookie cutters and place along crust edges for a lovely decorative touch.
I also sprinkle cinnamon onto the top of filling.
Bake at 425 for 15 min.
Reduce temp to 350 for 40-50 minutes or until pie no longer jiggles in center
