    MAIN DISHES: Chicken Enchiladas

    List of Ingredients


    • 1 lb chicken breast - cooked & shredded
    • 2 cups shredded cheddar cheese
    • 1 pkg Liptons Spanish Rice - prepared according to instructions
    • 1 can hot enchilada sauce
    • 1 can mild enchilada sauce
    • 1 can cream of chicken soup
    • 8 oz. sour cream
    • 12 flour tortillas


    Instructions


    1. In a large bowl, combine the chicken, 1 cup cheese and rice.
    2. In another bowl combine the sauces, soup and sour cream, stirring until well blended.
    3. Add enough of this mixture to the chicken to kake it creamy, usually about 1/2.
    4. Spoon chicken mix on to tortilla shells and roll up.
    5. Place, seam side down in a greases 9x13 pan.
    6. Pour remaining sauce over the enchiladas & bake at 375 degrees until warmed through and bubbly.
    7. Sprinkle with remainig cheese and return to the oven until cheese melts.
    8. Sewrve with additional sour cream, cheese and lettuce.
