    MAIN DISHES: Crab Meat Stuffed Chicken Breasts

    Recipe Introduction

    This is great with rice, salad and good rolls.

    List of Ingredients

    6 chicken breasts
    1/2 cup onion - chopped
    1/2 cup celery - chopped
    3 Tbls. butter
    3 Tbls. dry white wine
    1(7.5oz) crab meat (I use frozen imitation)flaked
    1/2 cup herb stuffing mix
    1 (4oz) can water chestnuts - drained and chopped

    2 Tbls. flour
    1/2 tsp. paprika
    2 Tbls. butter - melted
    salt and pepper to taste
    garlic powder - to taste

    Sauce:
    1 package Hollandaise Sauce
    3/4 cup milk
    2 Tbls. dry white wine
    1/2 cup shredded Swiss Cheese

    Recipe

    Skin and bone the chicken breasts; pound to flatten.
    Sprinkle with a little salt, pepper and garlic powder.
    Cook onion and celery in 3 Tbls. butter until tender.
    Remove from heat and add 3 Tbls. wine, the crab and stuffing mix & toss.
    Divide mixture amoung the breasts.
    Roll up and secure with long toothpicks, skewers or tie with string.
    Combine the flour and paprika & coat the chicken.
    Place in an 11x7x2 baking dish.
    Drizzle with 2 Tbls. melted butter.
    Bake, uncovered in 375 degree oven for 1 our.

    SAUCE:
    Blend hollandaise sauce mix and the milk.
    Cook, stirring until think.
    Add remaining wine and cheese.
    Stir until chese melts.
    Serve over chicken.
