2 cups flour
1 tsp baking powder
1/4 tsp. salt
4 Tbls. unsalted butter. soft but cool
1/4 cup Craisins
1 cup sugar
2 eggs
1/2 tsp vanilla extract
1/4 tsp almond extract
3/4 cup whole almonds, toasted, cooled and chopped coarse
2 Tbls. Orange zestRecipe
Preheat over to 350 degrees.
Spray cookie sheet with Pam
Sift the flour, baking powder and salt together and set aside.
Cream the butter and sugar for 2 minutes.
Beat in eggs 1 at a time, then the extracts.
Stir in almonds and orange zest.
Sprinkle the dry ingredients over the egg mixture.
Fold in until the dough is mixed.
Divide the dough in half and turn both portions onto the prepared baking sheet.
Stretch each into a 13x2 loaf.
Bake until golden brown, and cracks on top, about 35 minutes.
Place on a wire rack.
Cool oaves for 10 minutes.
Lower temps to 325 degrees.
Cut loaves into 3/8" pieces.
Place 1/2" apart on baking sheet, turn over at 71/2 minutes.
Bake for a total of 15 minutes.
