    2T Olive Oil
    1 medium onion, finely chopped
    2 garlic cloves, finely chopped
    2 6ounce jars marinated artichoke hearts drained and chopped
    4 eggs beaten
    1t salt
    fresh ground black pepper
    1/3 cup bread crumbs
    1/4t Tabasco sauce
    ½ lb sharp cheddar grated
    2T finely chopped parsley
    1T fresh oregano finely chopped


    Recipe



    Preheat oven to 325. Grease a 9” square or mini muffin tins. Heat oil in fry pan, add onion and garlic and cook until soft – about 5 minutes. In medium mixing bowl combine onions and garlic with artichoke hearts, egg, salt, pepper, bread crumbs, Tabasco, cheese, parsley and oregano. Mix well and put in pan or muffin tins. In pan, bake 30 – 35 minutes or until set in center. In muffin tins 20 minutes. These can be made ahead and frozen and just reheated before serving.
