    1/4 CUP SHORTENING
    1/4 CUP MARGARINE
    1 1/4 CUPS WHITE FLOUR
    1/2 CUP WHOLE WHEAT FLOUR
    1 TEASPOON BAKING SODA
    1 TEASPOON SALT
    3 SMALL BANANAS, MASHED
    JUICE OF 1/2 LEMON (ABOUT 1 1/2 TABLESPOONS)
    1 CUP WHITE SUGAR
    1/2 CUP BROWN SUGAR
    2 EGGS
    1/4 CUP BUTTERMILK
    1/2 CUP PECANS, CHOPPED
    1 TEASPOON VANILLA





    Recipe




    PREHEAT OVEN TO 350 DEGREES. PLACE SHORTENING AND MARGARINE IN MIXING BOWL. SIFT THE FLOURS, SODA, AND SALT TOGETHER, USING ALSO ANY REMNANTS LEFT IN SIFTER. MIX MASHED BANANAS WITH LEMON JUICE. CREAM TOGETHER THE SHORTENINGS AND SUGARS. ADD EGGS, ONE AT A TIME, BEATING WELL AFTER EACH. ADD FLOUR MIXTURE AND BUTTERMILK ALTERNATELY, STARTING AND ENDING WITH FLOUR. ADD BANANAS, CHOPPED PECANS, AND VANILLA. POUR INTO GREASED AND FLOURED LOAF PAN AND BAKE 1 HOUR AND 15 MINUTES, OR UNTIL TOP DOES NOT YIELD TO FINGER PRESSURE. COOL 15 MINUTES AND TURN OUT OF PAN. FREEZES.
