    KATHY HANKS' MOLASSES-GINGER COOKIES

    They are large, soft and chewy!!

    List of Ingredients

    2 2/3 cups oil
    4 cups sugar
    4 eggs
    1 cup molasses
    6 1/2 cups flour
    2 2/3 tsp. baking soda
    2 tsp. salt
    1 1/3 tsp. ground cinnamon
    1 1/3 tsp. ground ginger

    Recipe

    1. In a large bowl, combine all ingredients and refrigerate for 1 hour.
    2. Preheat oven to 375*. Roll the dough into balls the size of walnuts. (If you want smaller cookies, made the balls smaller; be sure and adjust the time). Roll balls in sugar and press down slightly on cookie sheet, spacing 2 inches apart (they will expand) and bake for 10-12 minutes. Cool for about 1 minute on cookie sheet and transfer to wire rack.
    These make alot of cookies, I usually half the recipe using(amounts above). These will stay chewy even if left out for awhile. Do not overbake.
