    Asparagus in Lemony Dressing

    Adapted from a Michael Chiarello recipe.

    List of Ingredients

    1 lb. asparagus

    Lemony Dressing:
    1/4 cup extra-virgin olive oil
    Lemon zest (fine) from one lemon
    1 tablespoon fresh lemon juice
    3/4 teaspoon fresh thyme
    3/4 teaspoon fresh garlic
    3/4 teaspoon kosher salt
    Freshly ground black pepper to taste

    Recipe

    Steam asparagus until just tender.
    Cool immediately in ice water; drain and pat dry.
    Combine asparagus and marinade in a shallow dish, turning to coat.
    Allow to sit 1 hour at room temperature before serving.


    Also good is roasting the asparagus then coating with dressing.
