    Coconut Almond Granola Bars

    List of Ingredients

    1/2 cup butter, softened
    3/4 cup packed brown sugar
    3 tbsp. honey
    1 egg
    1/2 tsp. each: vanilla and almond extract
    1 cup plus 2 tbsp. coconut almond granola (or other variety), divided
    1 cup flour
    1/4 cup flaked coconut
    1/2 tsp. baking soda

    Recipe

    In a medium bowl, combine butter, brown sugar and honey; stir well to combine. Add egg, vanilla and almond extract. Stir in 1 cup granola, flour, coconut and baking soda; mix well. Spread into a buttered 9-inch square baking pan and sprinkle with remaining 2 tablespoons granola. Preheat oven to 350?F. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into squares.
