    Cherry Valentine Cookie on a Stick

    1 cup butter, softened
    1-1/4 cups powdered sugar
    1 egg
    2 tsp. cherry extract
    2-1/2 cups flour
    1 tsp. cream of tartar
    1/2 tsp. baking soda
    1/4 tsp. salt

    Recipe



    To make the dough: In a large bowl, cream together butter and sugar until fluffy. Stir in egg and extract. Mix together dry ingredients and stir into butter mixture. Wrap and refrigerate for several hours or overnight.

    Preheat oven to 375°F. Roll dough out onto a lightly floured board 1/4-inch thick. Cut with a 3-inch, heart-shaped cookie cutter and place on a lightly greased baking sheet. Wrap a little dough around 10 popsicle sticks and tuck under the pointed end of half of the dough hearts; press lightly. (Do not put a popsicle stick on the remaining 10 or so dough hearts.) Bake for 8 to 10 minutes or until starting to brown around the edges. Let cool for a few minutes, then transfer to a baking rack to cool. Stir together 1 can of pink Funfetti frosting and 1/2 tsp. cherry extract. Spread over the flat side of the cookie without sticks and sprinkle the edges with colored sprinkles. Top with remaining cookies to create a sandwich. Decorate with additional frosting, if desired. When frosting is dry, decorate the sticks with ribbons. Makes about 20 to 24 sandwich cookies.
