    Prep time: 20 minutes, Cook time: 15 minutes

    List of Ingredients




    3 ripe but firm nectarines or peaches, pitted and sliced
    1/4 cup peach brandy
    1 sheet puff pastry, thawed (1/2 of a 17.3-oz. box)
    3 tbsp. sugar, divided
    1 cup heavy whipping cream
    3/4 cup prepared vanilla pudding or 2 individual vanilla pudding cups

    Preheat oven to 400°F. Stir together nectarines and brandy; let stand while pastry bakes, stirring occasionally. Unfold pastry sheet and cut into 8 equal portions; place on a parchment-lined baking sheet. Sprinkle with 1 tbsp. sugar and bake for 15 minutes or until pastry is puffed and golden brown. Remove from oven and let cool. Meanwhile, beat cream with remaining sugar until stiff peaks form; fold in pudding. Serve immediately or cover and chill for up to 2 hours. To assemble, cut pastry squares in half horizontally. Place bottoms on individual plates and top with equal amounts of whipped cream and nectarines. Top with remaining pastry.

    Makes 8 servings.
