    “Spam Musubi” is a very popular snack in Hawaii, a favorite anytime food for the locals. It is usually purchased from what we call the “Manapua Truck”, which is a travelling van that drives around selling candies, snacks, etc . . . it is also sold in most grocery stores in Hawaii as well as many fast food restaurants and establishments such as 7-11 or mini-marts found at most gas stations.

    There are many variations to making Spam Musubi. The local simple version is pretty easy.

    A can of spam, sliced to desired thickness, approx. 8 - 10 slices 5 sheets of Sushi Wrappers - you’ll need half a sheet for each slice. Cooked sticky rice Oil for frying
    Fry the spam in oil, just to brown Mold the rice into little rectangle patties. Place the rice in the middle of the sushi wrapper. Place the spam ontop of the rice. Fold over both ends of the sushi wrapper. Now you have the simple version of the Spam Musubi.

    List of Ingredients




    Sliced Spam
    Cooked Sticky Rice
    Half Sheets of Sushi Wrappers
    Oil for frying

    Marinade:
    1 cup Shoyu or Soy Sauce
    3 - 4 tablespoons of dark brown sugar
    2 tablespoons grated fresh ginger
    1 tsp garlic powder
    2 tsp sesame oil

    Recipe



    Mix ingredients then pour in a zip loc bag. Add the pieces of spam one at a time, making sure that each piece is coated with the marinade. Put in refrigerator for about an hour or two. Turn the bag over a few times.

    You can substitute pre-made teriyaki sauce, but add the sesame oil to the sauce. This sauce is similar to the Korean Kalbi Marinade.

    Fry each slice of spam until it is slightly brown. Set Aside.

    Do not discard the marinade. You will need to reduce this to make the “spam glaze”.

    Put marinade in a small pot. To this add the following:

    1 tsp cornstarch mixed in a cup with 1/2 cup water
    Add additional brown sugar and ginger to taste.

    Slowly cook the marinade mixture until it thickens.

    Assembling the Spam Musubi:

    Mold the rice into rectangle patties enough to fit the spam
    Put the rice mold in the middle of the Sushi Wrapper. Dip one slice of spam into the thickened marinade mix, both sides Put the dipped spam ontop of the rice mold. Fold the ends of the sushi wrapper to cover the spam.

    Follow the same steps until you’ve wrapped up all of the spam pieces.

    Note: You can create other variations of Musubi with this marinade. The marinade can be used for chicken, beef, pork or vegetables.
