    1 teaspoon butter
    2 eggs, lightly beaten
    Salt and freshly ground pepper
    1 ounce cream cheese, softened and cut into small cubes
    1 tablespoon Strawberry Preserves

    Recipe



    Melt the butter in a small skillet over high heat.

    Season eggs with salt and pepper. Swirl eggs into pan and briefly cook until bottom is set. Reduce heat. Scatter cheese over eggs. Add jam to center. When eggs are set and cheese is melted, fold over, cook a few seconds longer and serve.

    Serves 1
