    List of Ingredients


    • 2 lbs dried beans (4 c)
    • 1 tsp baking soda
    • 1 medium onion
    • 1/2 lb bacon or salt pork
    • 1/4 c brown sugar
    • 1/2 to 2/3 c molasses
    • 2 tsp dry mustard
    • 1/2 tsp salt


    Instructions


    1. Soak the beans overnight in cold water. In the morning, pour off the soaking watering and parboil beans iwth bakingsoda in fresh water until the skins crack when blown upon.
    2. Cut onion in quarters and put in the bottom of a bean pot or large casserole.
    3. Add parboiled beans. Put cut up bacon or salt port on top of the beans.
    4. Mix brown sugar, molasses, dry mustard, and salt with a pint of water. if necessary add more poiling water while baking.
    5. Bake at 300 for 6 hours or more.
