    Sweet Onion-Almond Bread





    1 cup sweet onions, chopped
    1/2 cup butter, melted
    3 cups bread flour
    1 tablespoon baking powder
    1/2 cup sugar
    1 teaspoon salt
    1 cup sliced almonds
    2 eggs
    1-1/2 cup milk
    1 teaspoon almond extract

    Saute onions in 1/4-cup butter. Sift the flour, baking powder, sugar and salt together in a mixing bowl. Stir in the onions and nuts. Beat together the eggs, milk, almond extract, and remaining butter.

    Add to the flour mixture and stir until well mixed. Batter may be slightly lumpy. Spoon into a greased 8 x 5-inch loaf pan. Bake in preheated 350F oven for an hour. Remove from oven and cool before serving.
