    Old West American Indian Fried Bread

    There are two ways to make fried dough. One calls for baking powder and the other uses yeast. Yeast makes for a chewier product. These can be fried in a wok. Toss them in sugar or drizzle with warm honey.

    1 tablespoon yeast
    5 tablespoons sugar
    1/2 cup warm water
    2 tablespoons oil
    1 cup warm evaporated milk
    1 cup unbleached all purpose flour
    2-3 cups unbleached white bread flour
    1 teaspoon salt
    1 teaspoon baking powder - optional
    vegetable oil for frying granulated sugar for dusting (with cinnamon if you like)

    Stir yeast into sugar and water. Let stand and foam. Add oil and milk and remaining ingredients. Knead to make a soft dough. Cover in plastic wrap and let rise 30-45 minutes. Deflate. Divide dough into 12-14 portions. Let rest a couple of minutes. Roll gently or stretch out into ovals. Cover and let rise another 15-25 minutes.
    Heat oil to 375 F. (Test a small portion of dough - it should sizzle immediately and rise to the surface quickly). Fry 1 or 2 dough portions at a time. Turn once golden brown. Drain and toss in granulated sugar.
